Sarah’s Notes
You may already be familiar with this Tuscan-style creamy dish from my other variations on Marry Me Chicken, but in case you don’t know…
I adapted my own version of this dish a while ago (so good it’ll make your diners want to marry you, as the story goes).
I thought it would lend itself perfectly to my slow cooker collection, and after plenty of testing, I was right!
Unlike my pasta dishes, this one will probably need a side dish to go with it. There are a few ideas below, or keep things simple with some microwave rice just before serving.
Slow Cooker Marry Me Chicken Ingredients

- Chicken – We’re using 650g/1.4lb of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks.
- Sun dried tomatoes – The type in an oil-filled jar, not the dry ones.
- Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or frozen.
- Chicken stock cube (bouillon cube) – Just add this to the slow cooker with the water measured, no need to dilute further.
- To stir in once cooked – Cream cheese, grated parmesan, fresh basil, sea salt and ground black pepper.

In the fridge You can keep this recipe cooked in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.
In the freezer Creamy sauces don’t freeze overly well and the chicken would be a little dry when you’re reheating it from frozen, however I wouldn’t let it go to waste. If freezing is your best option, you can do so, it may need a little extra liquid (water) to be added as you reheat it.

FAQs
Yes, sure. Just swap the cream cheese and parmesan for dairy-free alternatives and you’re good to go.
I became aware of it to start with on Pinterest and Tik Tok. I looked at lots of online recipes and discovered that this chicken-in-a-vaguely-Italian-style-cream-sauce was coined by American food publication Delish, because it was even better than Ina Garten’s much-loved ‘Engagement Roast Chicken’ recipe (who is a national foodie treasure in the US) – according to Today.
I decided to have a go at it, but with my own tweaks that I thought it needed, while keeping the main ingredients in common with the original: chicken, cream, sun dried tomatoes and parmesan (although I have swapped cream for cream cheese for the slow cooker version so there’s no curdling.)
While I love the chicken recipe on its own, the flavours are so adaptable, which is why making this a super family friendly meal is so achievable. You could also try my sister recipe to this… Divorce Me Chicken!
The Morphy Richards Sear & Stew Slow Cooker is my all-time favourite because you can use it for initial browning on the hob and it’s really light.
I wrote up a whole slow cooker review though, where you might find another one to suit your needs. Have a read here.

grandkids’ favourite meal – even the fussy eater if I pull out her sundried tomato bits!
I use half fat cream cheese and leave out parmesan for kids – adults stir theirs in.
Sometimes add petits pois to their dish for the greens. They like rice with it.
Have to stop them coming back for more after 3 helpings. So simple so quick so yummy.
Absolutely delicious! This dish has become a firm favourite in our house!
Hi Cheryl, thank you so much for this lovely comment! We are absolutely delighted this has become a firm favourite in your house.
Absolutely stunning dish. I added a rasher of cooked streaky bacon as well. I also made double quantity, which meant that my husband and I enjoyed three meals. So happy to have found this recipe. I am going to do it again tomorrow.
Hi Stephanie, what a lovely review, thank you! The streaky bacon addition sounds delicious, and doubling up for three meals is a great idea. We’re thrilled it’s going straight back on the menu tomorrow!
Can’t be dairy free with sour cream in it!
Hi Lulu, just to clarify, there’s no sour cream in this recipe, the sauce is made with cream cheese and parmesan stirred in at the end. It isn’t dairy free, but our FAQ suggests swapping the cream cheese and parmesan for dairy-free alternatives if you need to. Hope that helps!
easy as to make. tastes great 👍
Hi Georgi, easy to make and tastes great is exactly the combination we aim for! So pleased it worked well for you, thank you for taking the time to leave a review!
My daughter has already made your recipe and told me to add a rasher of cooked chopped bacon, which I did. Otherwise I followed your recipe exactly. I had defrosted two fairly large chicken breasts, so used your 2X recipe. It turned out to be delicious. I did serve it with creamy mashed potato. We have left overs for probably two more meals. Very happy!
Hi Stephanie, we love that this came recommended by your daughter, and the bacon addition sounds delicious! So pleased the 2x recipe worked well and there are leftovers to enjoy too.
the flavour was nice and subtle but we like ours a little bit bolder. so added more paprika, sundried tomatos and then ended up adding 2 tbsp of tom paste and perfection.
Hi Robyn, we love that you made it your own! Extra paprika, more sun dried tomatoes and a couple of spoonfuls of tomato paste sound like brilliant additions for a bolder sauce. Thank you for sharing your tweaks for other readers to try!
Could the cream cheese be swapped for something healthier like Quark?
Hi Rachel, we haven’t tested this one with Quark so we couldn’t say for sure. Lower fat alternatives contain more water, so the sauce may turn out thinner and could split when heated. If you do try it, stir it through right at the end and let us know how you get on!
