Waldorf Salad {Quick & Easy}

This elegant Waldorf Salad recipe is impressive but SO quick and easy to make. Made with plenty of fruit and nuts, it’s full of flavour and has loads of zesty, crispy, colourful crunch.

Ingredients

  • 75 g Walnuts Very roughly chopped
  • 3 Apples See notes
  • 1/2 Lemon Juice only
  • 200 g Red grapes Halved
  • 2 Celery sticks Sliced into 1 cm pieces
  • 50 g Greek yoghurt
  • 50 g Mayonnaise
  • Sea salt To taste

Instructions

  • Put your walnuts into a small frying pan over a low heat and toast for 5-6 minutes until they are just starting to colour. Set aside.
  • Now core and chop your apples into 2cm cubes. Put into a large bowl and add the lemon juice. Toss to coat.
  • Add the remaining ingredients and stir well so everything is coated.
  • Add the walnuts and stir in.
  • Check for seasoning and add salt and/or more lemon juice if needed.
  • Garnish with extra walnuts if you’d like to.

Notes

Type of apples: I use Granny Smith apples for this salad because they’re so juicy, crisp and tart. Loads of flavour but also super crunchy. You can use whichever are your favourite though
Dressing: Dress the salad just before serving to avoid the ingredients going soft
Speedy chopping gadget: If you prefer to use a gadget to speed things up, you can use a chopper instead. This one is my favourite and is a salad gamechanger!
For best results, serve immediately
