Toast the walnuts: Put your walnuts into a small frying pan over a low heat and toast for 5-6 minutes until they are just starting to colour. Set aside.
Chop: Now core and chop your apples into 2cm cubes. Put into a large bowl and add the lemon juice. Toss to coat.
Everything in: Add the remaining ingredients and stir well so everything is coated. Add the walnuts and stir in.
Season to taste: Check for seasoning and add salt and/or more lemon juice if needed.
Garnish with extra walnuts if you’d like to.
