Ingredients

  • 4 Chicken breasts
  • 2 tbsp Tikka seasoning/spice mix
  • 2 tsp Oil

To serve:

  • 4 Brioche buns
  • 1/2 Red onion cut into thinly sliced rings
  • Lettuce
  • Dollop of mango chutney

Instructions

  • Flatten the the chicken breasts, I do this by bashing them with a rolling pin between a sheet of baking paper.
  • Sprinkle over the tikka seasoning.

To Cook on the Hob:

  • In a large frying pan, heat the oil and pan fry your chicken breasts for about 7 minutes each side on a medium heat (this will depend on how much you’ve flattened them so just cut one open to check it’s cooked before serving).

To Cook in the Air Fryer:

  • Spray the bottom of the air fryer with some oil.
  • Carefully add the coated chicken breasts to the air fryer basket. Spray the tops with a little oil.
  • Air Fry at 200c/400F for 10-15 minutes (the timings will depend on how thick the chicken breasts are, always check with a thermometer to be sure).

To Serve:

  • Plate up your burgers. I like to toast the brioche buns. Enjoy!

Notes

Chicken: You could you chicken thighs instead of breast. They will be delicious too, but will just take slightly longer to cook
Make this vegetarian: I would recommend slices of halloumi rolled in flour and seasoning, or a giant portobello mushrooms instead of the chicken for a meat-free burger. Try this recipe
Serving suggestions: Salad, corn on the cob, coleslaw and chips, wedges or jacket potatoes
