On the hob:
Bring your lamb chops up to room temperature.
Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
Heat 1 tbsp olive oil in a large frying pan over a medium high heat and fry the chops for a minute or so on the fatty edge first, then 2-4 minutes on each side, depending on how 'done' you like them.
Leave to rest under some foil for 5 minutes before serving.
In the oven:
Preheat the oven to 200℃ fan/390F, 220℃/420F or Gas Mark 6. and bring your lamb chops up to room temperature.
Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
Lay the lamb out on a large baking tray and roast in the oven for 15-20 minutes, until the lamb is cooked to your liking.
Leave to rest under some foil for 5 minutes before serving.
In an air fryer:
Preheat the airfryer to 200℃/390F and bring your lamb chops up to room temperature.
Mix the garlic, herbs and 2 tbsp olive oil together with some salt and pepper. Use your hands to rub the oil all over the lamb chops.
Lay the lamb out in the air fryer tray and cook for 8-12 minutes, turning the chops over half way, until the lamb is cooked to your liking.
Leave to rest under some foil for 5 minutes before serving.

How to know if the Lamb Chops are cooked perfectly: If you have a meat thermometer, you’re looking for 56-60℃ for medium rare. Meat always increases in temp a little when it’s resting so don’t be afraid to take it out a few degrees before the temperature you’re aiming for.
