Preheat the oven to 200°C.
Mix meat ingredients (minus the oil) in a clean bowl. Use clean hands to pat it into a loaf/log shape (see recipe notes below).
Take an oven safe deep, wide pan and add the oil, then sit your meatloaf on top.
Put in the oven for 30 minutes.
While this is in the oven, make your sauce. Mix all of the sauce ingredients in a small bowl and set aside.
Remove meatloaf from the oven, pour the sauce around it and pop the bacon slices on top.
Turn the oven down to 180°C and put the meatloaf back in for 30 minutes.
Check it is cooked through (with a meat thermometer if you have one) before serving.
