Easy Chicken Fajitas

This fun, easy and mouthwatering Chicken Fajitas recipe is a perfect treat for the whole family to dig in. Succulent chicken, crunchy vegetables and a super tasty seasoning, all wrapped in tortillas and topped with your favourite extras.

Ingredients

  • 650 g Chicken breasts Cut into strips
  • 4 tbsp Fajita seasoning
  • 2 tbsp Olive oil
  • 1 Red pepper Deseeded and cut into thick slices
  • 1 Yellow pepper Deseeded and cut into thick slices
  • 1 Green pepper Deseeded and cut into thick slices
  • 2 Red onions Peeled and cut into wedges

To serve:

  • 8 Tortilla wraps
  • 150 g Sour cream
  • 2 Avocados Sliced
  • 150 g Cheddar cheese Grated
  • 200 g Tomato salsa
  • 1 Lime Cut into wedges
  • 15 g Coriander

Instructions

  • Flavour the chicken: Place the chicken in a large bowl and mix with the fajita seasoning and half of the oil.
  • Now time to pan fry: Heat a large frying pan over a high heat and tip in the spiced chicken. Cook for 5 minutes until the chicken is starting to turn golden.
  • Add the rest of the oil to the pan and add in the peppers and onions.
  • Cook everything together for 5-10 more minutes, stirring often, until the chicken is cooked through and the veg has softened slightly and is starting to char.
  • Serve it all up: Serve with the tortillas and toppings in the middle of the table and let everyone tuck in.

Notes

Storing leftovers: Simply fold the chicken mixture inside a tortilla and let them go cold. Put them in a container and store them in the fridge for up to 3 days. They’ll be delicious for lunch the following day and shouldn’t be too messy as there’s not loads of sauce. Also freezes for up to 3 months. 
Heating up the tortilla wraps: If you want to warm your tortillas, wrap them all in foil and place them in the oven at 100°C fan/120°C/250°F/Gas Mark ½ while you prepare the fajitas.
To prep ahead: One thing I love about this dish is that I can easily cook the chicken and prep the sides earlier in the day, then just reheat the fajita chicken mix and dish out the sides at dinner time. So easy!
