Date Bark

This energy-boosting chocolate Date Bark with peanut butter and Medjool dates is here to give us total joy. It's a heavenly tasting sweet treat that is also full of goodness and no refined sugar. It’s also SO easy to make and keep in the freezer, ready for a moment of bliss.

Ingredients

  • 300 g Pitted Medjool dates About 25
  • 100 g Peanut butter
  • 40 g Salted peanuts Roughly chopped
  • 150 g Dark chocolate Melted
  • Flaky sea salt

Instructions

  • Slice down one side of the dates and lay them out next to each other on a sheet of parchment paper on a baking tray.
  • Cover with another piece of parchment paper. Use a rolling pin or the bottom of a glass to squish and press the dates into one layer before carefully peeling off the top sheet of parchment.
  • Spread the peanut butter over the dates then scatter over the chopped peanuts.
  • Pour the melted chocolate over the top and use the back of a spoon to help spread it out.
  • Sprinkle over the flaky salt and place in the freezer for 30 minutes before chopping into pieces.

Notes

Medjool dates: You can use normal dates if you prefer but Medjool ones will give you a really squishy, carmel-like layer. Remove stones or buy pitted.
Peanut butter: I prefer this kind but Date Bark is delicious with any nut butter, so use your favourite. 
Storing: Dark Bark is best when kept in the freezer. You can enjoy it while it’s still frozen (like Snickers Ice Cream!) or it defrosts quickly, so leave for a few moments before eating.
