Christmas Rocky Road {Easy Recipe}

Christmas Rocky Road is the perfect festive sweet or dessert for Christmas. Make this no bake treat in December for parties or homemade gifts for friends and family.

Ingredients

  • 150 g Unsalted butter
  • 400 g White chocolate
  • 150 g Gingernut biscuits Crushed into chunks
  • 180 g Mini marshmallows
  • 400 g Mixed candy I used red and green Skittles
  • 150 g White chocolate chopped To decorate
  • Sprinkles and sweets to decorate

Instructions

  • Melt the butter and white chocolate gently in pan over a saucepan of simmering water.
  • Stir until smooth and allow to cool for 10 minutes.
  • Add the crushed biscuits, marshmallows and sweets and press into a small roasting pan, lined with baking paper.
  • Melt the remaining white chocolate, drizzle over the top and add decorations.
  • Chill for about 2 hours. Remove from the fridge and cut into chunks.

Notes

Chocolate: Don’t use ‘cooking chocolate’ here! It won’t set in the same way as regular chocolate
Tin: Use a 20cm x 20cm square tin. You can use another size or shape but just be aware your squares might be thinner or thicker
Line the tin: Make sure you do this so you can get the Rocky Road out quicker and without breaking it. Use baking paper or baking parchment NOT greaseproof paper for best results
