Ingredients

  • 750 g Unsmoked gammon joint
  • 150 g Marmalade
  • 3 tbsp Runny honey

Instructions

  • If the gammon has a layer of fat, carefully remove this using a sharp knife and discard. Score the top of the ham.
  • Put the marmalade and honey into a small bowl and mix together. Sit the gammon on a double layer of tin foil large enough to make a parcel. Fold the sides up. (Be sure to line the air fryer well as the marmalade will be very difficult to scrub off otherwise!)
  • Brush the marmalade mixture over the ham and close the foil parcel.
  • Carefully put the ham into the air fryer pan.
  • Air fry on the regular setting at 160℃/325F for 30 minutes.
  • Carefully open the foil parcel and turn the ham over, spoon over some of the cooking juices, reseal the parcel and cook for further 30 minutes.
  • Open the foil parcel and cook for a final 10-15 minutes until the ham is cooked through and coloured (see notes).

Notes

Gammon joint: I use a 750g/1.65lbs unsmoked gammon joint, based on 4 people sharing this as a main meal, but you can swap your weight according to your needs. Go for a boneless joint for ease
How to know when it’s cooked: The ham is cooked once the internal temperature reaches 70℃/160F
Line the air fryer: Be sure to line the air fryer well as the marmalade will be very difficult to scrub off otherwise!
To score: Simply take a sharp knife and slice in lines at an angle across the joint, then do the same in the opposite direction, making diamond shapes as you go
