If the gammon has a layer of fat, carefully remove this using a sharp knife and discard. Score the top of the ham.
Put the marmalade and honey into a small bowl and mix together. Sit the gammon on a double layer of tin foil large enough to make a parcel. Fold the sides up. (Be sure to line the air fryer well as the marmalade will be very difficult to scrub off otherwise!)
Brush the marmalade mixture over the ham and close the foil parcel.
Carefully put the ham into the air fryer pan.
Air fry on the regular setting at 160℃/325F for 30 minutes.
Carefully open the foil parcel and turn the ham over, spoon over some of the cooking juices, reseal the parcel and cook for further 30 minutes.
Open the foil parcel and cook for a final 10-15 minutes until the ham is cooked through and coloured (see notes).
