Notes

Potatoes: When it comes to the type of potatoes, use something floury like Maris Piper or King Edwards, Russet or Yukon Gold.
Skin on fries: I don’t bother peeling the potatoes because it’s quicker and they have additional flavour. But if you’d like to peel first, feel free.
Soaking/parboiling: Feel free to do these steps if you like, but they are fine without (I don’t do this), especially if you’re eating the chips straight after cooking.
Cutting into chip shape: If you’re chopping by hand, turn the potatoes lengthways, carefully cut into 1 cm slices and cut each slice into 1 cm strips, they need to be this thick to make sure they don’t fall apart. You can also use a gadget - the one I use is called KitchenCraft Potato Chipper.
Air fryer tray: When adding to the baking tray, don’t overcrowd the chips or they might not go as crispy as you’d like and will take longer to cook. Make in batches if necessary.
