Letโs spend Sunday getting ready for the week ahead! Hereโs the second of my new end of the weekย meal prep planย for those of us juggling real family life. Use as much or as little as you like, but I hope it helps ๐งก

If youโve ever used any of myย free meal plansย before, youโll know how handy it is to follow a loose guide when it comes to figuring out what to cook during the week.ย
This time, Iโm offering something a little different with myย Sunday Setup Series, hereโs Week 2.ย
This is just what Iโve done in a few hours on a Sunday afternoon. Doย one recipe, or all of them, whatever helps you and your family life!

What meal prep we can doโฆ
I am not suggesting we should prep for every single meal here, but every little helps when it comes to meal prepping.ย
Do as much or as little as suits YOU.
This week weโll be including tips for:ย
โญ๏ธ Breakfasts for the week to save precious time in the morning
โญ๏ธ Healthy snacks that are perfect for either packed lunches or after school
โญ๏ธ A sweet treat thatโs also perfect for packed lunches, desserts or elevenses
โญ๏ธ Soup for a lunch or light dinner that can easily be batch cooked for another week too
โญ๏ธ A veg tray to get everything chopped to save time later
โญ๏ธ A fruit salad for breakfast, snack or dessert
โญ๏ธ One base meal that you can turn into 3 different meals if you want to

Sunday SETUP tips:
โก๏ธ Double up the portion of soup you make and put the surplus in the freezer for another week
โก๏ธ I use these meal prep glass containers from Amazon to keep food stored in, and this sectioned platter is ideal for all your chopped vegetables
โก๏ธ For freshness, most prepped food will keep fine in the fridge for 3-4 days, otherwise most items can be frozen instead
โก๏ธ Notes on storing, freezing, defrosting and reheating should be in each individual recipe, or in the notes below

Week 2 โ Sunday SETUP Meal Prep:
Breakfasts
โญ๏ธ These perfectly titled Meal Prep Muffins are SO good and are great for breakfast on the go
โญ๏ธ Easy to reheat for a hot breakfast on the go (or not)
โญ๏ธ STORING: These will keep fine in the fridge for 3 days for weekday breakfasts, but you can also freeze them too, so make a batch to save time on busy mornings

Meal Prep Breakfast Muffins

โญ๏ธ These Granola Bars are delicious and perfect for lunch boxes, snacks or even breakfast
โญ๏ธ STORING: These will keep fine in an airtight container but you can also freeze them, fully covered, too
โญ๏ธ Be sure to cook these until they are very golden and crunchy (they can fall apart if not cooked enough)

โญ๏ธ Ideal for so many things during the week โ in lunch boxes, a mid-morning treat or after school snack
โญ๏ธ STORING: This will keep fine in a cake tin or sealed container for 3 days. No need to refrigerate

โญ๏ธ This Parsnip Soup is hearty, healthy and satisfyingย
โญ๏ธ Itโs perfect for lunches or a quick, light dinner
โญ๏ธ STORING: This will keep fine in the fridge for 3 days. Itโs also ideal for freezing so make a double batch for another week!

Parsnip Soup {Easiest Ever 20 Minute Recipe}
Base Meal x1.5
โญ๏ธ You could make a big batch of this Pulled Pork for a variety of different meals in the week if you like. The original recipe serves 8 but I felt 12 portions would give the right amount of food for the three meals below (to increase the portion size in a recipe you drag the slider along until you get to the number you need).
โญ๏ธ Meal 1: Serve in buns with Homemade Chips and Coleslaw
โญ๏ธ Meal 2: Serve it in Mac and Cheese with a green salad
โญ๏ธ Meal 3: Serve it in tacos with shredded lettuce, feta, avocado and pink onions (this recipe is in my second book!)
โญ๏ธ STORING: This will keep fine in the fridge for 3 days, but you can also freeze it into portions too

Slow Cooked Pulled Pork {ULTIMATE recipe!}
Vegetable tray
โญ๏ธ Chop up any veggies youโd like to use for snacks or in meals during your Sunday Setup and take the faff out of cooking during the week!
Fruit salad
โญ๏ธ Add your favourite fruits to the shopping basket, wash and chop them up into a big bowl and you have easy pickings for throughout the week! Theyโre ideal for snacking, breakfasts or desserts with yoghurt

Made a couple of adaptions (seed crackers instead of granola bars, tomato soup, Thai beef instead of pulled pork, crustless quiches instead of muffins). Added a batch of your cookies. I put the cut veg sticks in a bit of salted water to help them last.
Adaptions were because I was using up food that we had in. Took me 4hrs but I did take a couple of breaks. I think I could be quicker. Any tips for speed?
