I just had to make a Slow Cooker Marry Me Chicken version of this family favourite for those days when time is a struggle and we can benefit from prepping earlier in the day.

You may already be familiar with this Tuscan-style creamy dish from my other variations on Marry Me Chicken, but in case you don’t know…
I adapted my own version of this dish a while ago (so good it’ll make your diners want to marry you, as the story goes).
I thought it would lend itself perfectly to my slow cooker collection, and after plenty of testing, I was right!
Unlike my pasta dishes, this one will probably need a side dish to go with it. There are a few ideas below, or keep things simple with some microwave rice just before serving.
Slow Cooker Marry Me Chicken Ingredients

- Chicken – We’re using 650g/1.4lb of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks.
- Sun dried tomatoes – The type in an oil-filled jar, not the dry ones.
- Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or frozen.
- Chicken stock cube – Just add this to the slow cooker with the water measured, no need to dilute further.
- To stir in once cooked – Cream cheese, grated parmesan, fresh basil, sea salt and ground black pepper.
How to make Slow Cooker MArry Me Chicken

1. Toss the chicken in the plain flour with plenty of salt and pepper until it’s well coated. Put in to the slow cooker.

2. Add the garlic, sun dried tomatoes, oregano, paprika, stock cube and boiling water. Cook as per the recipe below.

In the fridge You can keep this recipe cooked in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.
In the freezer Creamy sauces don’t freeze overly well and the chicken would be a little dry when you’re reheating it from frozen, however I wouldn’t let it go to waste. If freezing is your best option, you can do so, it may need a little extra liquid (water) to be added as you reheat it.

Yes, sure. Just swap the cream cheese and parmesan for dairy-free alternatives and you’re good to go.
I became aware of it to start with on Pinterest and Tik Tok. I looked at lots of online recipes and discovered that this chicken-in-a-vaguely-Italian-style-cream-sauce was coined by American food publication Delish, because it was even better than Ina Garten’s much-loved ‘Engagement Roast Chicken’ recipe (who is a national foodie treasure in the US) – according to Today.
I decided to have a go at it, but with my own tweaks that I thought it needed, while keeping the main ingredients in common with the original: chicken, cream, sun dried tomatoes and parmesan (although I have swapped cream for cream cheese for the slow cooker version so there’s no curdling.)
While I love the chicken recipe on its own, the flavours are so adaptable, which is why making this a super family friendly meal is so achievable.

Slow Cooker Marry Me Chicken
Ingredients
For the Slow Cook:
- 650 g (1.4 lb) Skinless, boneless chicken breast, About x4, cut into bite sized pieces
- 30 g (0.25 cups) Plain flour
- 3 Garlic cloves, Peeled and crushed
- 100 g (3.5 oz) Sun dried tomatoes, Drained and very finely chopped
- 1 tsp Dried oregano
- 2 tsp Paprika
- 300 ml (1.25 cups) Boiling water
- 1 Chicken stock cube, undiluted, crumbled
To Finish:
- 100 g (3.5 oz) Cream cheese
- 50 g (0.5 cups) Parmesan, Grated
- 15 g (3 tsp) Fresh basil leaves
- Sea salt and freshly ground black pepper
Instructions
- Toss chicken in the plain flour with plenty of salt and pepper until well coated.
- Put into the slow cooker with the garlic, tomatoes, oregano, paprika, crumbled stock cube and water.
- Cook on HIGH for 2.5-3 hours or LOW for 5-6 hours until the chicken is cooked through.
- Mix in the remaining ingredients just before serving.

So, so tasty. Loved it with mashed potato and green beans. Will definitely make again, next time one for the slow cooker and one as a dump bag for the freezer.
I made this last night and there was not a single piece left! This meal was delicious and so easy to make and I’d definitely make it again!
Made this for a Girls Night In, yesterday. Delays meant I had to keep it on the warm setting for over an hour, but it was still perfect! I paired it with microwave brown and white rice for convenience and broccoli spears. I had meant to have a trial run before the event, but needn’t have worried, it was so easy and I have to say, very well received … and it went further than I imagined … I used 5 medium sized chicken breast and this made up 7 servings. I will definitely be using this recipe again.
I’ve made this today but the sauce looks ever so creamy and not like the picture at all, what could i have done wrong?
