TIPS: How to get the BEST Air Fryer Chips

LEAVE THE SKINS ON: I don’t bother peeling the potatoes as I am far too lazy and also quite like the texture, plus they add a little extra flavour. Of course, it’s up to you though and if you’d like to peel first, feel free.

SOAKING AND PARBOILING: I don’t do any! Feel free to do these steps, but they are fine without, especially if you’re eating the chips straight after cooking.

✅  HOW TO CUT INTO CHIPS: I use this gadget – the KitchenCraft Potato Chipper. But if you’re chopping by hand, turn the potatoes lengthways, carefully cut into 1 cm slices and cut each slice into 1 cm strips, they need to be this thick to make sure they don’t fall apart.

Air Fryer Chips Ingredients

The ingredients for making homemade chips laid out on a white surface.
  • Potatoes – When it comes to the type of potatoes to use, Maris Piper or King Edwards are perfect for chips. You’ll want floury potatoes, so something like Russet or Yukon Gold if you’re in the US.
  • Olive oil – Use this to coat the potatoes. Sunflower or vegetable oil is OK too. A light flavour or flavourless is best.
  • Garlic granules – These lightly flavour the chips nicely, but if you’d rather something with a little more depth and kick, you could try chilli powder, smoked paprika or onion powder instead.
  • Sea salt and freshly ground black pepper – To taste.

FAQs

My chips are not very crispy. help!

If they’re not quite as crispy as you’d like, this is almost always because they need more time to cook or they are overcrowded on the air fryer tray. If you don’t give them some space, they will be soggy and they’ll take ages, so if you need to cook more than the space you have, cook them in batches.

This is simple to do: Simply cook your batches and then throw them all in together at the end, reheating for a few minutes.

Should I not soak the chips before cooking them?

I’ve read about people doing this and tried it. It’s supposed to remove some of the starch from the potatoes before cooking. I guess it makes them a tiny bit crispier, but for me it’s not worth the extra step.

If you want to try it, when you’ve cut the chips up, soak them for 30 minutes in cold water. Then drain and pat dry before continuing.

Notes

Potatoes: When it comes to the type of potatoes, use something floury like Maris Piper or King Edwards, Russet or Yukon Gold.
Skin on fries: I don’t bother peeling the potatoes because it’s quicker and they have additional flavour. But if you’d like to peel first, feel free.
Soaking/parboiling: Feel free to do these steps if you like, but they are fine without (I don’t do this), especially if you’re eating the chips straight after cooking.
Cutting into chip shape: If you’re chopping by hand, turn the potatoes lengthways, carefully cut into 1 cm slices and cut each slice into 1 cm strips, they need to be this thick to make sure they don’t fall apart. You can also use a gadget – the one I use is called KitchenCraft Potato Chipper.
Air fryer tray: When adding to the baking tray, don’t overcrowd the chips or they might not go as crispy as you’d like and will take longer to cook. Make in batches if necessary.
