At Easter we have ALL the excuses to have chocolate upon chocolate. And that’s exactly what this Easter Rocky Road is!

Get every mini chocolate egg you can find and throw it in. Melt everything together with butter and golden syrup, press even more eggs in, along with some biscuit and marshmallow for loads of texture, then set overnight in the fridge.

Simple… and simply divine!

It’s no secret that I am a fan of ultra easy bakes, and I simply NEEDED an Easter-themed rocky road recipe in my toolbox. 

I wanted to create something that could be adapted from a classic rocky road, but with some seasonal treats thrown in. 

We often bake (and eat) more chocolatey treats around our cultural celebrations, either because we’re entertaining, gifting or indulging. This recipe ticks the box for all of those eventualities, and is perfect if we have loads of leftover Easter eggs we want to use up too. 

And of course, when I say ‘bake’, what I really mean is melt, mix and set in the fridge!


Easter Rocky Road Ingredients

Ingredients on a counter, including chocolate, mini eggs, biscuits and golden syrup.
  • Unsalted butter – Salted is fine if it’s all you have, but obviously it can give a slight savoury tang.
  • Milk chocolate – Callebaut is the brand I always use and recommend, you can find it HERE.
  • Filling – Flavour and gooey/crunchy texture comes from golden syrup, mini marshmallows and Oreos.
  • Small chocolate eggs – Such as Creme Eggs, Malteser eggs, Galaxy eggs etc (foil removed!).

How to make Easter Rocky Road

Ingredients in a bowl: Milk chocolate, butter and gold syrup.

1. Melt the milk chocolate, butter and golden syrup as per the recipe below. Once smooth, stir in the broken up Oreos, marshmallows and chocolate eggs.

Melted chocolate into a baking tin and add easter egg toppings.

2. Mix together well and smooth into a lined baking tin. Pour over more melted chocolate and embed in more chopped up eggs to decorate. Set in the fridge overnight until set.


STORING

Once the Easter Egg Rocky Road has set, it’s fine to keep at room temperature, unless it’s a warm day and then it would be much better in the fridge.

Recipe Tips

Best chocolate to use

I use my favourite Callebaut chocolate for this recipe. This chocolate is just amazing. It melts so well and really makes a difference to any recipe. 

When you buy it in bulk (1kg/2.2lb bags at a time) from Amazon it works out to about the same price as supermarket chocolate. A good investment I think as it really does make SUCH a difference. You can then use it again for other bakes.

Type of baking tin

I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker.

Line the tin!

Make sure you do this so you can get the rocky road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever.

I buy it in bulk from Amazon so I don’t run out, and it works out cheaper. Be careful not to confuse it with greaseproof paper, which isn’t suitable for no-bake cakes.

How to melt the chocolate 

I find the easiest and quickest way is to use the microwave, but do this carefully as it can burn (no longer than 30 second bursts, stirring in between).

You can also bubble up some water in a pan and place a heatproof bowl over it with the chocolate inside (make sure the water isn’t touching the bottom). This takes a little longer but the chocolate melts nice and evenly.

FAQs

How long will Easter Rocky Road keep for?

I mean, there’s very little chance of you having this problem! But just in case, it should be fine for up to a week. After that the marshmallows tend to get very sticky and wet where they’ve been cut (so I’ve heard).

What should I do if the slab is too hard to cut up?

Once you’ve taken it out of the fridge, allow it to cool to room temperature for 30 minutes before trying to chop it up.

Easter Rocky Road {Easiest Ever Recipe!}

This is the ultimate indulgent no-bake baking at Easter! A chocolatey Easter Rocky Road with extra chocolate on top. Perfect for making with the kids or as a gift.

Total Time: 2 hours 10 minutes

Ingredients 

  • 150 g (5 oz) Unsalted butter
  • 400 g (14 oz) Milk chocolate, Chopped
  • 4 tbsp Golden syrup
  • 180 g (6 oz) Mixed mini chocolate eggs
  • 80 g (3 oz) Mini Eggs
  • 150 g (5 oz) Oreos, Broken
  • 180 g (6 oz) Mini marshmallows

To decorate:

  • 150 g (5 oz) Milk chocolate, Melted
  • More eggs/Easter chocolates to decorate

Instructions 

  • Melt the milk chocolate, butter and golden syrup in a bowl in the microwave, stirring every 30 seconds. (Or melt over a pan of hot water.)
  • Once smooth, stir in the broken up Oreos, marshmallows and chocolate eggs.
  • Mix together well and smooth into a lined baking tin.
  • Pour over more melted chocolate and embed in more chopped up eggs to decorate. Set in the fridge overnight until set.

Gift bags: Once I have cut up my slab of rocky road, I pack the pieces, fresh from the fridge, into little bags like these cellophane bags. It adds a special something to make them feel like a real gift.
